Allspice (kababa, although it is not exactly the same) is a tropical spice which grows mainly in Jamaica. Columbus introduced it to the Old World. The reddish-brown berries were mistaken for peppercorns at first, and hence the Spanish name pimiento, later Anglicized to pimento. Allspice berries are the size of small peas, and have a somewhat rough skin. They have a pleasantly fragrant aroma that resembles a peppery compound of cloves, cinnamon, and nutmeg, and hence the name allspice. This spice goes very well in meat dishes and is used whole in pickles. It is better to buy whole allspice berries and grind them as needed. They are brittle and crush easily.
