Tempting Eve’s pudding is a homely sweet of apples topped with a light and deliciously creamy sponge. The method works equally well with other fruits, so try varying it throughout the year, using seasonally available produce. (See the variations for some ideas.)

  1. Peel, core and slice 500 g cooking apples. Place in a deep ovenproof dish - ideally a soufflé dish. Sprinkle with lemon juice and 100 g caster sugar.

  2. Preheat the oven to 160°C. Prepare a half quantity of Steamed Sponge Pudding mixture and spread it lightly over the fruit. Bake for 1-1½ hours, until the pudding has risen and is set.
