A meringue pyramid looks spectacular on the table and usually elicits a comment or two. As impressive a showpiece as it is, it is actually quite easy to assemble. All that is required is a steady hand for neat, even piping. Dust the finished pyramid with cocoa and top with a pecan nut.
Prepare three to five meringue discs that decrease in size proportionally. Place the largest on a serving platter or stand. Brush with melted white chocolate and, once set, top with piped coffee cream. Brush the second disc with white chocolate and, once set, place the disk on top of the previous layer and pipe with cream. Continue in this way until the entire pyramid is assembled.
