A long emerald-green leaf originally from South-East Asia used for its colour and fragrance, it yields a highly perfumed finish when cooked into a liquid or rice. It is essential to use fresh leaves (not dried or frozen) to acquire the necessary flavour and colour. The fresh leaves are sold in bunches from Asian grocers.
