For kababs, grilling is easier if you use flat or square metal skewers. The metal conducts heat and the shape helps the meat stay in place when you turn them over, instead of spinning around on the stick. If you are using wooden skewers, you’ll need to pre-soak them in warm water for 30 minutes or so before using, to prevent them burning under the grill.
