Plant Milks โ milk substitutes made from soya beans, nuts, rice, oats and coconut, available in liquid and sometimes powdered form. Sweeteners are often added, so read cartons carefully and choose unsweetened where possible. Coconut milk is the richest and creamiest but tastes strongly of coconut. All recipes in this book use full-fat coconut milk. Almond milk is creamy, light and pleasant tasting. Soya milk is best for making buttermilk or yoghurt.
