Toasted sesame oil (not to be confused with the flavourless light sesame oil used in Middle Eastern cooking) is highly regarded as a flavouring used, sparingly, in marinades or as a final seasoning. It is also favoured in many cold dishes, as part of a dressing or as a condiment in dipping sauces.
A native of India and one of the world’s oldest spices and oil-seed crops, sesame seeds produce an aromatic oil that is golden or dark brown in colour, thick, rich and strongly flavoured. It is not used as a cooking oil.
