I have fallen in love with my stovetop grill pan. I enjoy cooking quickly and nothing quite gives you the control of browning (without too much oil) and getting that sear without lighting a barbecue. Sometimes you need to go under flame (grill) so you’ll need a rack over the roasting pan; otherwise, coal or gas barbecue grills will do the trick outdoors.
