How Made The flour is sifted onto a wooden board and kneaded long and vigorously with eggs and with nettles that have been boiled, squeezed dry, and finely chopped. When the dough is firm and smooth, it is wrapped in a dish towel and left to rest. It is rolled out with a rolling pin into a sheet, not too thin, and cut into narrow, flat noodles. They are boiled in plenty of salted water.
