In principle, Fritots differ from Beignets because they should invariably be served accompanied by Tomato Sauce. If custom causes difficulties in differentiating between these two names it is better the word Beignet be used for those preparations which come under the heading of Entremets (sweet dishes) and keeping the name Fritots for those which come under the heading of hot Hors-d’oeuvre.
Confusion really becomes marked however, when the words Fritot and Marinade are used synonymously; in reality the difference between them can be easily and clearly defined if the following observations are borne in mind.
