I personally prefer the other tricks, as this one uses plastic, but it is practical. First, put a food-grade plastic bag inside the jar (making sure it is big enough for the jar).
Pour water straight into the bag in-situ, suck out all the air, and then tie the top together. (Zip-up bags don’t work for this.)
The air bag is like a cushion on top of your vegetables. If you don’t want plastic to touch the ferment you can use a cabbage leaf in between.
