Milk Kefir

I am starting this chapter with dairy kefir. This has been hailed by some as almost a magic potion for well-being because of its probiotic effect in our gut. It is very easy and satisfying to make milk kefir. The result is a liquid thicker than milk, but thinner than yogurt. Kefir has a sour taste, like yogurt, but you can do a second fermentation if you wish to add some sweetness and flavour to it.

Milk kefir can be enjoyed as it is with your cereal or granola instead of ordinary milk. I also often use it in smoothie recipes for an extra bit of protein and probiotics. For good probiotic effect you could have a small glass in the morning on an empty stomach. You can use kefir in any recipe to replace milk, for example in pancakes, sauces and dips, and in your baking recipes. If you are vegan you can get the same health benefits from coconut milk kefir.
