It is beyond the scope of this book, but I should mention the GAPS (gut and psychology syndrome) diet developed by Dr Natasha Campbell-McBride, which has treated thousands of children and adults with autism using her programme based on reducing certain carbohydrates and introducing fermented foods.

Fermented foods have a very special scent. I love the smell of fermented cabbage, but many people do not. It is an acquired scent and I am sure you will learn to love it, just like the taste. It does not taste the way it smells, so do not let the fragrance put you off! I have had people coming to my workshops telling me that they can’t stand ferments, but that they have heard they are good for you. Most of these people leave my workshops loving fermented foods.
