Purchased filo is very easy to use as long as you keep it covered to prevent it from drying out.
Place the sheets of filo pastry on a work surface and cover with a damp tea towel. Work with one sheet at a time, keeping the rest covered to stop them from drying out.
Brush the first sheet with melted butter, then place another sheet on top and brush again with melted butter. Repeat until you have the number of layers specified in the recipe.
