  • About
First you need to identify how fresh - or how old - the fish is when you get it home. Some fishmongers these days are way ahead of the game and will pack your fish in special foil pouches that keep it cool for a couple of hours, because an hour in the back of a hot car can shorten the shelf-life of your carefully selected fish dramatically. If I’m buying lots of fish or live shellfish, I will normally take a cool box and some ice packs with me in the back of the car - a wise move when buying most fresh products, come to that.
