  • About
While closely resembling macadamia nuts, albeit with a slightly larger, rougher, and waxier exterior, candlenuts are not edible as snacks. On very rare occasions one consumes candlenuts after they are cooked, but should one be exposed to the raw nuts; expect to suffer from slight nausea. This is likely caused by a mild toxic substance commonly found within the nuts, although it is not poisonous, and will immediately disappear after a few seconds of exposure to heat.

This ingredient is also not used directly to flavor food; rather it is ground up to a fine, smooth paste, which can be used to enhance the flavor of dishes. Because of the nature of the preparation, it goes well with coconut milk-based curries and water-based stews. To maintain the freshness of candlenuts, they must be kept in the freezer inside a jar or a tight wrap, where they will keep for up to a year. Another storage option is in a cupboard, although within six months the candlenuts will likely become stale.
