Hoja santa (“holy leaf,” Piper auritum or P. sanctum), an anise-flavored herb, is another of the characteristic wrappers. It is also known as hierba santa or acuyo and is used mainly in the south-eastern states and the Mexico City area. The large, dark green leaves, which grow on bushes, are used to wrap food in, tamal-style, and to flavor stews and sauces. You may be able to find it in the southwestern United States, or try one of the sources. It is worth trying to find because it is both delicious and truly important in the pantheon of Mexican seasonings.
