Chileans eat a lot of fruit and it is usually the dessert of choice after most meals. On Easter Island, various types of banana were once a crucial part of the diet and Rapa Nui cake is still a favourite dessert. Coconuts are also abundant there and along other coastal regions, and the milk is used on Easter Island in place of lemon juice for making ceviche. Elsewhere, especially in the verdant central plains, cherries, oranges, lemons, figs, papaya, peaches and, of course, table and wine grapes grow in abundance, and these are enjoyed fresh, juiced, dried or candied for use in sweet and savoury dishes when the fruit is not in season. Cactus fruit (called tuna fruit by Chileans) is very popular, and enjoyed all over the country.
