Throughout the 1960s America was buffeted by the winds of change from both a social and a culinary perspective. The economy was booming, Americans were in a hurry, and the world was becoming smaller. Affordable commercial jet travel meant people were on the move. By the beginning of the decade, almost two-thirds of American women were working outside the home, resulting in increased disposable family income. Despite the rosy surface, serious issues were brewing relative to civil rights and there was a growing concern about the environment.
