Poultry and Fowl: Commercialization

Appears in
Oxford Encyclopedia of Food and Drink in America

By Andrew F. Smith

Published 2004

  • About
Chicken remains the dominant poultry in America and the world. In addition to the traditional ways of preparing chicken in the home, fast food establishments have commercialized specific chicken dishes, such as the fried chicken served at KFC and the chicken McNuggets served at McDonald’s. Chicken burgers are served at many hamburger establishments, and “chicken dogs” are sold in supermarkets throughout America. Many manufacturers include chicken in frozen dinners. Turkey remains a distant second in the commercial poultry market, but its sales have extended beyond the traditional Thanksgiving and Christmas periods.
