Vitamins are a group of organic substances that are essential for human growth and normal metabolism. They occur naturally in small amounts in most foods and beverages and can be produced synthetically. The lack of certain vitamins in the diet can bring about specific diseases. Although research into the link between diet and some of these diseases had been going on for well over a century, vitamins did not gain widespread public attention until the period between World Wars I and II.
