candyfloss a confection of spun sugar, is a popular item at fairs and festivals in many countries. In the USA it may be known as spun sugar or cotton candy; in France it is called barbe à papa (dad’s beard). The sugar is melted in the machine and forced through small holes by centrifugal force. This produces threads which are collected on a stick, to give something which looks like a huge lollipop made from cotton wool. It becomes sticky if stored, and therefore is made freshly for each customer.
