cannolo (or cannoli, the plural form more familiar in N. America) a Sicilian sweetmeat made from flour, mixed with Marsala, cinnamon, cocoa, egg, and a mixture of water and vinegar (which is said to keep it crisp). The thinly rolled dough, cut in circles, is wrapped around metal tubes and deep fried. When cool, the cannolo is filled with sweetened ricotta, chocolate chips, and candied orange peel, or liqueur-flavoured ricotta in which case the ends are dipped in chopped nuts. These cakes are made for carnival, in February.
