cœur is a term used to describe cheeses in the form of a heart, usually after being placed in a mould or when drained in a heart-shaped basket such as Cœur à la crème—cheese curds which are then covered with cream and sugar and served as a dessert. Another example of a cheese taking this shape is the cœur d’Arras.
