dentex Dentex dentex, a sizeable (maximum length 1 m/40") and important fish of the Mediterranean and E. Atlantic from NW Africa to the Bay of Biscay. The colour of this fish changes as it grows older, from grey to a faintly rosy hue and then to a bluish-grey; and the number and disposition of the dark spots vary. The quality of the dentex is almost as good as that of the gilt-head bream and it is in keen demand. Few individuals survive long enough to reach the maximum size, and those in the markets are usually in the range 20–50 cm (8–20").
