hazel-hen Bonasa bonasia, a bird of the grouse family, Tetraonidae. Its range extends from C. and N. Europe to Japan and its preferred habitat is mountainous and wooded. Of moderate size (average total length 36 cm/14") and grouselike shape, it feeds on berries and has white flesh which is highly esteemed.

The hazel-hen is best roasted or prepared in other ways usual for grouse.
