Lamington a small cake covered with chocolate icing and rolled in coconut. They are an Australian speciality believed to be named after Baron Lamington, governor of Queensland from 1896 to 1901, or his wife. It cannot be proved that they were invented in the kitchens of Government House, although the interest Lady Lamington appears to have taken in household matters may support the claim. A letter she wrote to thank the cookery writer Hannah MacLurcan for her most recent book in 1898 expresses an awareness of the advantage of clear practical instructions in the writing of recipes. However, the book contains no reference to the cake.
