Viewed as a whole, inscribed on the List of the Intangible Cultural Heritage of Humanity by UNESCO in 2010, the Mediterranean diet is a nutritional model based on ‘olive oil, cereals, fresh or dried fruit and vegetables, a moderate amount of fish, dairy, and meat, and many condiments and spices, all accompanied by wine or infusions’. In keeping with the wider view of gastronomy involving more than just food, UNESCO gathers into the rubric the whole gamut of lifestyle, commensality, tradition, and ritual.
