paskha a rich, sweet type of cheesecake/pudding, traditionally made at Easter in Russia (Paskha means Easter) to celebrate the end of Lent. It is made from cheese (curd, cream, or cottage), eggs, sugar, and dried fruits and is flavoured with vanilla. The sides of the paskha may be decorated with slivers of almonds, glacé cherries, and angelica, or left plain.
Paskha is traditionally marked with the orthodox cross. A special pyramid-shaped, perforated wooden mould called a pasochnitsa, lined with muslin, is used and it is this which leaves an imprint of the cross on the surface and often other decorations too.
