  • Palaemon serratus, common prawn, a species of inshore waters with a range from Norway to the Mediterranean. Maximum length 10 cm (4"). Almost colourless when alive, of a fine orange-red when cooked.

  • Pandalus borealis, northern or deep-water prawn, red when alive—but few people see it thus because it belongs to deep waters and is usually cooked at sea. Range: from Greenland down to Britain in the east and Martha’s Vineyard in the west. Fished extensively in Norwegian waters.

  • Aristeus antennatus, French crevette rouge. To 20 cm (8"). Light red with a mauve headpiece. (The slightly larger Aristeomorpha foliacea displays similar colours, but darker.) Mainly a Mediterranean species, as is the following one.

  • Penaeus kerathurus, French caramote, Italian mazzancolla. To 22 cm (9"). Brown with reddish tints. Of a high reputation, especially in Italy.
