siphnopitta a honey and cheese pie which is a Greek Easter-time speciality. It is made on most of the Greek islands but as the name implies it is renowned on the island of Siphnos. A soft, fresh, unsalted sheep’s cheese called mizithra is used in the making of this pie and the honey is thyme scented. It is sometimes called melopitta Siphnou.
