steppe or stepnoj is a cheese first made in Russia by German immigrants, which is now manufactured also in Denmark, Germany, and Austria. It resembles a whole-milk tilsiter but is made at a slightly lower temperature, so that it is softer and milder. It is coloured yellow with a pigment such as annatto. Unlike Tilsiter, Steppe is never given additional flavourings such as caraway.
