taramosalata a savoury spread which is prominent among those Greek dishes which have acquired international fame. Taramás (tarama in Turkish) means salted fish roe. In the past, and to some extent even now, the spread has been made with the dried roe of grey mullet, a product called avgotáracho in Greece but more widely known under the French name boutargue. When this became too expensive there was a transition to smoked cod roe, resulting in a spread which differs in flavour from the original but is not inferior to it.
