Cinnamon sticks are curled, thin pieces of the bark of the cinnamon tree. The Chinese version is rather thick, highly aromatic, and more pungent than the common cinnamon sticks, but the latter are an adequate substitute. They add a robust taste to braised dishes and are an important ingredient of five-spice powder. Store cinnamon sticks in a tightly sealed jar to preserve their aroma and flavour. Ground cinnamon is too strong and not a satisfactory substitute.
