You will find in the markets of Hong Kong many different types of oranges from China, Southeast Asia and the United States. A popular type used for home cooking is immature oranges that are green because of the chlorophyll in their skin. They are slightly sour and their skins are dried and used in cooking, as the Chinese believe they are good for digestion.
