A good colander and several stainless steel bowls are indispensable in cooking the recipes in this book. Many of the methods call for oil to be drained from the wok, so a good colander or sieve, to be set inside a stainless steel bowl, can facilitate this.
A fairly large-size strainer or slotted spoon is also helpful for removing food from the wok or oil.
