When I want to dry just a few herbs, perhaps as a memento of a particular place or herb garden, I make a herb garland – couronne d’herbes. This is a very pretty way of drying and storing herbs. The garland can be hung on the wall in a warm kitchen and sprigs or leaves of the herbs can be detached as needed.

To make a herb garland you will need 2 ft of heavy-gauge florist’s wire, about 2 ft of thin florist’s wire, 6–8 leafy shoots of bay leaves, 4–6 stems of marjoram, 4 short rosemary stems, 4 heads of fennel or dill flower, and some sprigs of other herbs that dry well.
