Calzone are half-moons of doubled, thinly rolled yeast dough, stuffed with cheeses, meats, and/or vegetables. Tomatoes are a relatively recent addition; calzone were made without them up until the 1940s (Accademia Italiana della Cucina, La Cucina: The Regional Cooking of Italy).
