Muscovy ducks are native to Central and South America. They are significantly leaner than Pekin ducks, and Muscovy meat is redder and has a gamier taste than that of Pekins.
Muscovy ducks have a large amount of breast meat. Male duck breasts are often used in sautéed preparations. (The tougher legs work well in braises and confits.) Small female birds are frequently served roasted. Muscovy ducks are also used to produce foie gras.
