Baccalà Mantecato is a whipped mousse of puréed salted cod, enriched with olive oil.

Cook the soaked, drained cod in simmering milk until tender and whip to a paste in a stand mixer or food processor.
Return the mixture to the pot, and add the cooked onion and garlic, and milk as necessary, stirring with a wooden spoon until the mixture is soft and smooth.
Add the bread and the rest of the olive oil. Continue to whip with a wooden spoon until the mixture is soft and creamy, drizzling in some olive oil or a bit of extra milk if necessary.
