Candle nuts - also known as kemiri nuts, these are native to the Moluccas Islands, Malaysia and the Pacific. It’s a hard oily nut which is mostly used in Malaysian and Indonesian cookery to thicken sauces and curries. Macadamias make a good substitute but they are sweeter than candle nuts.
