Tarator - there is some discussion surrounding this sauce. The Turkish and Middle Eastern version often resembles the skordalia of Greece, but it’s always made with walnuts. However, it can be a dressing made from tahini, lemon juice and garlic. In Bulgaria, however, it refers to a chilled soup of cucumber, yoghurt, garlic and walnuts, which is in itself almost a version of tzatziki!
