Truffle - a tuber growing mainly in France and Italy, located through scent by specially trained pigs or dogs and then dug up carefully. The season is roughly September through to February, but they are weather-dependent. The best-quality white truffles can fetch up to £1,200 a kilogram. Truffles are very aromatic - some love them, some can’t stand them.
