Wild game is often dry and tough. By hanging it after shooting to remove blood, the meat is tenderized. The longer the hanging time, the more gamey the flavor, and the greater the change in the molecular structure of the meat. Older game tends to need longer hanging than young animals. To describe game as high implies a very strong gamey flavor.
