  1. Prepare artichoke hearts through step 5 of the Procedure to Prepare an Artichoke Heart.
  2. Using a sharp chef knife, cut the hearts into thin slices (A). Immediately drop the slices into heavily lemon-acidulated water.

  3. Pan-steam the artichoke hearts just al dente in a small amount of salted, lemon-acidulated water (B).

  4. Open-pan cool.
