To make a broccoli crown, cut the stalk just below the place where it branches out (A).
To create florets, cut farther up the stalk (B).
The cylindrical stalks of peeled broccoli stem may be cut into rounds, ovals, bâtonnets, or juliennes. All these shapes make interesting additions to salads, soups, stir-fries, and other composed dishes. Peeled stems may also be cooked soft and puréed to become the base for soups and sauces.
