Baby artichokes are small, immature artichokes, so young they have not yet formed a hairy choke in the center. A true baby artichoke weighs no more than 2 oz (60 g) and is no more than 2 in. (5 cm) long. Baby artichokes need only to be trimmed following steps 1 through 4.

Many so-called baby artichokes marketed in North America are actually the small, fully mature artichokes that grow on the lower part of the artichoke plant. They weigh up to 5 oz (150 g) and are as long as 3½ in. (9 cm). They have a small choke and are fabricated and cooked in the same manner as large artichokes.
