  1. Select a 12-in. (30-cm) flour tortilla or lavash bread. If necessary, warm it in a countertop oven to make it flexible.
  2. Place the flatbread on a cutting board.
  3. Apply the spread in an even layer to within ½ in. (1 cm) of the edge (A).

  4. Arrange the filling ingredients horizontally in a roughly 4 x 10-in. (10 x 25-cm) rectangle slightly forward of center on the flatbread (B).

  5. Arrange the internal garnishes in a smaller rectangle on top of the filling (C).

  6. Lift the bottom edge of the flatbread over the filling and tuck it under the far edge of the filling (D). Pull back to form the bread and filling into a roll.

  7. Fold in the edges of the flatbread on either side (E).

  8. Roll the sandwich (F).

  9. Secure shut with 2 sandwich picks.
  10. Cut the sandwich into 2 sections (G).

  11. Place on a plate (H).
