Miss Dorothy Hartley, who is a leading authority on Medieval England, and is intensely interested in Folk Cookery sends the following note about ‘Gale Beer,’ and the name of Miss Hannah Buttery, Thornton-le-Dale, Pickering, Yorkshire, who can tell anyone how it is made. ‘Gale,’ Miss Hartley writes (from Johannesburg), ‘is a sweet herb that grows in the moss and was in use in Caedmon’s time; they probably made gale beer at St. Hilda’s monastery up north.’
