Looking for a new way to cook mushrooms? Fire up your grill. Mushrooms readily absorb flavorful marinades, not to mention the scent of the fire and wood smoke. The only real challenge is cooking them evenly and keeping them from falling through the bars of the grate. This can be accomplished by skewering them (it’s easier to turn one kebab than six individual mushrooms) or “stir-grilling” them in a grill wok or grill skillet. These look like a wok or frying pan made of perforated metal plate. They allow you to toss the mushrooms, as you would in a wok, while the many holes let the smoke and fire flavors pass through. Stir-grilling must be done quickly over high heat to keep the loss of the mushroom juices to a minimum.
